Kohlrabi Chawanmushi. It may be a mouthful to say, but it’s a delight to eat. Chawanmushi is a traditional Japanese egg custard that is actually pretty simple to make. Egg, mirin, dashi, and salt, placed in small bowls and steamed until silky smooth. Chawan (tea cup) mushi (steam) literally translates to “teacup steamed egg custard.” Delicate yet complex, this savory treat is at home on a breakfast table or in the midst of a multicourse state dinner. Like all dishes that come out of José Andrés Group’s Test Kitchen we aim to push the envelope and elevate a dish beyond what we know. Chef Hector Contreras reimagined this recipe by using a kohlrabi as both the star of the recipe and the serving vessel. The result is a treat that’ll surprise and delight any diner lucky enough to be served this dish.
